Cleaning out the Cupboards

The website’s “Ingredients” feature, right above the search bar, allows you to enter “Ingredients I want” and “Ingredients I don’t want.” Just type in whatever you have, and voila! A list of perfect and delicious recipes that use up whatever’s left in your cupboard. Here are a few examples:
Yogurt + Cereal = Low-fat Baked Chicken
Ingredients (makes two servings):
2 skinless, boneless chicken breasts
2 cups plain non-fat yogurt (also works with key-lime, or other citrus-flavored yogurt for an extra kick)
1 cup cornflakes, Cheerios, Special K or other plain grain-y cereal
Directions:
1. Preheat the oven to 350 degrees F.
2. Crush the cereal into crumbs in a Ziploc baggie or between two pieces of wax paper.
3. Dip the chicken breasts in the yogurt, coating both sides. Roll in crushed cereal to coat all sides, then place on a baking sheet or in a baking dish. Bake the chicken for 30 minutes.
Peanut butter + Chicken + Pasta = Pasta With Peanut Sauce
Ingredients (makes two servings):
1/3 box (8 ounce box) pasta
3 tablespoons creamy peanut butter
2 teaspoons soy sauce
3 tablespoons chicken broth
2 tablespoons olive or vegetable oil
1 cup of mixed vegetables, thinly sliced (red or green bell peppers, white or green onions, bean sprouts, shitake mushrooms, zucchini, yellow squash, etc…)
2 skinless, boneless chicken breasts, cut into cubes
Directions:
1. Cook pasta in a pot of boiling water until al dente (slightly chewy).
2. Sauté vegetables in a pan with oil until tender-crispy. Set aside.
3. Sauté chicken until no longer pink. Set aside.
4. Mix peanut butter and soy sauce in a large saucepan over medium-low heat. Add chicken broth. Add pasta, vegetables, and chicken. Toss to coat all ingredients. Serve immediately.
Beer + Cheese = Cheddar Beer Triangles
Ingredients (makes 10 servings):
2 cups baking mix (like BisQuick)
½ cup shredded Cheddar cheese
½ cup beer
Directions:
1. Preheat oven to 450 degrees F. Grease a baking sheet (or cover a baking sheet in tin foil… no mess later!)
2. Stir the baking mix, cheese, and beer in a bowl until the mixture clings together. Knead briefly until dough just holds together. Pat the dough into a 6-inch circle and cut into 10 wedges. Place the wedges onto the baking sheet.
3. Bake until browned on the bottom and golden brown on top, about 8 to 10 minutes.
4. Drink the leftover beer and enjoy your biscuits.
